All Greens Require a Collar
Dig into your Southern Roots and get a large chunk of your daily Micros with this veggie/vegan Collard Greens quickie. Prep time is minimal, have it stove-top in 10 minutes and you’ll be ready to eat in an hour.
Prep
First dice up Onions, Ginger and the 6 Cloves of Garlic. Chop up the 10 Cups of Collard Greens into 1-2 inch pieces. And That’s IT!
Cooking
Heat up 1 tbs of Olive oil in Medium size sauce pan. Mix in Onions, Garlic and Ginger, stir at medium heat until onions are translucent (about 5 minutes).
Add 2 cups of vegetable broth and cook to a simmer (5-10 minutes). Add Seasonings to accommodate taste preference (if your looking for some extra spice you can use Chili powder or Cayenne pepper).
Add Collard Greens by the handful and stir until greens are fully submerged. Add Mushrooms and let cook on low heat for 30-45 minutes or until greens are tender.
Your formal greens are ready for a not so formal feast….Enjoy!

- 1 Tbs Olive Oil
- 2 Onions
- 10-12 Cups of Chopped Collard Greens
- 2 cups of Vegetable Broth (Low Sodium)
- 6 cloves of Garlic
- 1 Inch piece of Ginger Root
- 1 Cup Mushrooms
- 1 Tbs Pepper
- 2 Tbs Curry Powder
- 1 Tsp Turmeric
